Banana Rum Sponge Cupcakes

This soft and fluffy banana cupcakes is very easy to make and tastes delicious with a hint of rum.



Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 12 cupcakes

Ingredients
3 large cold eggs
120g caster sugar 
180g ripe banana, mashed
150g cake flour
1/2 tsp baking powder
1/4 tsp baking soda
100ml vegetable oil 
1/4 tsp Rum

Method
  • Preheat the oven to 160C. Prepare muffin baking pan lined with cupcake cases.

  • In a bowl, sieve flour, baking soda and baking powder. Set aside.

  • Place cold eggs, sugar, Rum & mashed banana in a stand mixer bowl. Beat at maximum speed for 5 minutes until mixture is stiff and thick.



  • Turn the speed to low, mix in the flour mixture.



  • Mix in the oil until batter mixture is shiny.



  • Spoon batter into cupcake cases.



  • Bake for 45 minutes until skewer inserted comes out clean.
