Banana Weetbix Muffins

Tasty for breakfast, smell like banana bread and are refined sugar free. These easy muffins are also great for snacks, parties or lunch boxes. They can be made gluten and lactose free. They freeze well and can be served warm or cold.

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves 12

Ingredients
3 ripe bananas
4 Weetbix, crushed (gluten free, if required)
3/4 cup milk (lactose free, if required)
3/4 cup desiccated coconut
3/4 cup self raising flour (gluten free, if required)
1/4 tsp baking powder
2 eggs
3 tbsp oil
2 tbsp honey (or maple syrup)

Method
  • Preheat oven to 180 degrees. Line a 12 pan muffin tray with patty liners.
  • Mash the banana in a bowl. Add the Weetbix, milk, stir to combine and stand for 10 minutes.
  • Add the desiccated coconut, flour and baking powder. Stir to combine.
  • In a separate bowl combine the eggs, oil and honey.
  • Combine the egg mixture with the other ingredients.

  • Spoon the batter into the patty liners and bake for 20-25 minutes until a skewer comes out clean.
