Barbecued Fish Skewers

There's no better way to enjoy spring weather than with a barbecue. Instead of the familiar red meat and poultry, why not try barbecued fish? The hot coals give fish an exceptional depth of flavour and I've used a seafood favourite: salmon.



Preparation Time: overnight
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
2 salmon fillets
2 garlic cloves
Black pepper
Paprika
Chilli powder
Olive oil

Required ingredients


Method
  • Crush the garlic and add to a tub.
  • Add the seasoning.



  • Add the oil, stir, and secure the lid.



  • Pour the marinade over the fish ensuring an equal coating.


  • Fire up the barbecue.

  • Place the fillet (skin side down), on the barbecue and leave to cook for 5 minutes.



  • Turn the fillet over (the skin should be crispy), and repeat this and the previous step twice.



  • After 20 minutes the salmon will be cooked through, succulent and barbecued to perfection.

  • Serve with salad for a light and healthy lunch in the sunshine.
