Barbecued Fish Skewers

There's no better way to enjoy spring weather than with a barbecue. Instead of the familiar red meat and poultry, why not try barbecued fish? The hot coals give fish an exceptional depth of flavour and I've used a seafood favourite: salmon.

Preparation Time: overnight
Cooking Time: 20 minutes
Makes: 2 servings

2 salmon fillets
2 garlic cloves
Black pepper
Chilli powder
Olive oil

Required ingredients

Crush the garlic and add to a tub.
Add the seasoning.

Add the oil, stir, and secure the lid.

Pour the marinade over the fish ensuring an equal coating.

Fire up the barbecue.

Place the fillet (skin side down), on the barbecue and leave to cook for 5 minutes.

Turn the fillet over (the skin should be crispy), and repeat this and the previous step twice.

After 20 minutes the salmon will be cooked through, succulent and barbecued to perfection.

Serve with salad for a light and healthy lunch in the sunshine.
