Barbecued Sauce Cheese Chicken

This is another very easy recipe to make with little preparation, and fabulous results.

I used a Coles brand barbecue sauce which I would normally not do, however I pressed the wrong one when ordering online.

I wanted to serve this with spring onions as a garnish however it was pouring and dark outside, so I did not venture out to pick these!

Preparation Time: 5 minutes
Cooking Time: 20 - 30 minutes
Serves: 2 - 3

Ingredients
2 chicken breasts
4 slices short cut bacon
½ cup cheese, grated
½ cup barbecue sauce
Spring onions, optional, to decorate

Method
  • Pre heat the oven to 180°/160° fan forced.

  • Cut the chicken in half is they are really big ones - if they are, one would probably be enough for two people

  • Cover the chicken breasts with much of the barbecue sauce, and turn it round so it is coated evenly.


  • Bake in the oven for about 15 minutes, depending on the thickness. Do not overbake, or the chicken will be tough.

  • Meanwhile cook your bacon.

  • Take out the chicken and add the rest of the sauce, add the bacon to cover them.


  • Top with the cheese, and return to the oven


  • Bake for about 5 minutes or until the cheese has melted.

  • Add the sliced spring onions, if using, and serve.
