Barbecued Tropical Chicken Burger
This is not just an ordinary chicken burger but a huge, mouth watering tropical burger with fresh pineapple, bacon, cheese and barbecue sauce.
The only problem was how to eat this, as it was just SO big and my mouth SO small in comparison!
No mess in the kitchen as it was all made on the barbecue, though you could, of course, adapt it to cook in the kitchen.

Serves: 2
Ingredients
300 g chicken mince
½ cup breadcrumbs
1 egg
1 - 2 spring onions
2 tbsp barbecue sauce, or similar
2 shortcut bacon rashers
1 thick slice fresh pineapple
1 large hamburger bun
2 tbsp mayonnaise
1 lettuce leaf
About 50 g cheese, thinly sliced (I used Jarlsberg)
Method
Light a barbecue, or you can use a fry pan.
Mix the mince, egg, breadcrumbs, spring onion and half of the barbecue sauce in a large bowl.
Shape this mixture into two large patties.
I made them super large as I had huge buns
Using a barbecue hotplate, grease this and put the patties on here on a medium to high heat.
Cook them about 5 minutes on each side, depending on the thickness.
Meanwhile once you turn them, add the bacon and pineapple and cook these for about 3 minutes each side.
Cut the buns in half and spray the cut side with some cooking oil. Put these on the barbecue (or grill if using indoor fry pan), for a minute or two on each side.
Put the mayonnaise on the pieces of toasted bun, and add the patties.
Next add the bacon.
Then add the pineapple.
Put the cheese on top, and then the remaining barbecue sauce.
Put the lid on and try to eat! It is delicious and best eaten with finger and not knife and fork.
