Barramundi and chips

Barramundi is an exquisite delicacy that can be enjoyed at home for a more affordable and enjoyable price. Cook up a storm with this delicious ingredient and become the ultimate favourite chef of the family!



Preparation Time: 10 minutes
Cooking Time: 20-30 minutes
Makes: 4 servings

Ingredients
4 pieces of barramundi
3 potatoes
1 red capsicum
Lemon
200-250g butter

Method

  • In a large frying pan, heat up the butter for the barramundi to cook in.

  • Once the butter starts bubbling, place two pieces of barramundi at a time and cook on medium heat.



  • Flip the barramundi every 10 minutes for about 20-30 minutes and make sure each side presents with a beautiful, white-y appearance.



  • Meanwhile, chop up the potatoes (after peeling them) into thin sticks.



  • In a deep saucepan, fill up with ghee to about 2/3 of the way, and bring to boil.

  • Once the ghee is boiling, place the potato sticks and let it cook for about 10 minutes or till it turns golden brown.



  • While the barramundi and potatoes are frying, chop up the capsicum into flower-like shapes and keep aside.

  • With the lemon - slice little pieces at an angle of 45 degrees.

  • Serve the barramundi with a side of potato chips, capsicum and a slice of lemon.
