Basic Cheesecake

For something sweet on your tastebuds with a soft and fluffy texture. A heartwarming and melty feeling.



Preparation Time: 40 minutes
Cooking Time: 45 minutes
Serves: 10

Ingredients
Base
250g plain biscuits
1 teaspoon mixed spice
100g melted butter

Filling
500g cream cheese
2/3 cup castor sugar
4 eggs
1 teaspoon vanilla essence
1 Tablespoon lemon juice

Method
  • Grease a 20cm springform tin.
  • Crush biscuits in food processor and add mixed spice and butter.



  • Line base of tin with foil and brush sides with oil. Press crumbs over base and sides of tin.



  • Place in fridge for 20 minutes.

  • Preheat oven to 180°.

  • Beat cream cheese until smooth. Add sugar, vanilla essence and lemon juice. Beat until smooth.



  • Add eggs 1 at a time, beating well after each addition.

  • Pour mix into tin and bake for 45 minutes or until just firm to the touch.

  • To serve, release the bottom of the tin and carefully place on a plate to cut into slices.
