Basic Pasta Dough
Fresh pasta is tastier than shop bought by a mile. All you need is a pasta machine and a couple of ingredients. Once you have fresh pasta you will never go back to buying it. You can make it ahead of time and store in the fridge for about a week.
Preparation Time: 40 minutes
Cooking Time: 4 minutes
Makes: 6 servings depending on how you cut it
Ingredients
2 1/2 cups plain flour
4 eggs
Method
Place the flour in a large bowl with a flat base or alternatively in a mound on a chopping board.
Make a large well in the centre making sure that the side are built up well so the eggs don't overflow.
Add eggs.
Whisk eggs with a folk, then slowly start to gather in flour until a dough starts to form.
Transfer dough to a chopping board (if you aren't making it on one already) then knead for approx 7-8 mins until the dough is smooth and elastic.
This is an important step, if the dough is not elastic, it will not roll properly
Once the dough has reached the correct consistency, cover with a damp cloth and leave to rest for approx 30 mins. The pasta should not stick to your fingers and should be able to be pulled without breaking.
After it has rested, separate the dough into four parts.
Flatten each part and roll through pasta maker on the widest setting.
Fold the sheet into thirds and repeat on the widest setting another two times.
Reduce setting by 1 and roll through (no folding this time). Continue reducing setting by 1 each time you roll dough through until its reaches the desired thickness.
Either cut pasta with cutting attachment or use a knife to make into desired shape.
Cook pasta in boiling water for approx 4 mins or until pasta has lightened in colour and rises to the top.
