Basic Scones
The great thing about scones is that they are versatile, you can have sweet scones with jam of choice and whipped cream, or you can have savory scones with ham and grilled cheese.
I did have a little trouble with this recipe, during the kneading section, I found my dough was rather sticky, so I added extra self-raising flour. Also, internal oven temperatures do vary, my scones were cooked and ready in 10 minutes, so do monitor them carefully.

Makes: 12 servings
Ingredients
3 cups (450 gms) of self-raising flour
80 gms of butter, but into cubes
1 1/4 cups (310 ml) milk, plus extra for brushing
Jam and whipped cream, to serve
Method
Preheat oven to 200 degrees, grease and flour a baking tray
Sift the flour in a large bowl. Using your fingertips, rub the butter into into the flour mixture until it resembles fine bread-crumbs.
Make a well in the center. Stir in 1 cup (250 ml) of the milk using a flat-bladed knife until the dough forms, add more milk if needed
Turn the dough out onto a lightly floured surface and lightly knead (try not to over knead as this can result in tough scones). Gently press the dough out into a round shape about 2 cm thick.
Using a 5 cm cutter, cut out 12 scones, place on the baking tray 1 cm apart. Brush with a little milk and bake for 20 minutes or until lightly golden and well risen.
