Basil and Ricotta Pesto

This is a healthy alternative to the typical basil pesto as it contains no oil or parmesan. It's delicious as a dip, on sandwiches, or stirred through pasta.



Preparation Time: 15-20 minutes
Makes: 1 cup

Ingredients
2 cups firmly packed basil leaves
1/2 cup low fat ricotta
2 garlic cloves
Juice of 1/2 lemon
Small handful of cashews
Salt and pepper

Method
  • Chop the cloves and cashews. I used the underside of a mug for the nuts.




  • Loosely tear the basil leaves and place them in a food processor. If, like me, you have an inadequate processor, firstly blend the leaves until they are finely cut up.




  • Add all the other ingredients to the processor and blend until you achieve a smooth consistency.
