BBQ Chicken Bacon And Cheese Pizza Yeast Free

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients
For the barbecue sauce
1 cup diced or 200 g can tomatoes
1/8 cup balsamic vinegar
1 - 2 tbsp sugar or maple syrup, to taste
Salt and pepper, to taste

For the pizza base
1 3/4 cups flour (gluten free if required)
2 tsp baking powder
1/8 tsp salt
2/3 cup boiling water
3 - 4 tsp olive oil

For the pizza topping
2/3 cup cooked chicken, cut (see Tips)
2/3 cup sliced bacon
1/2 tomato, sliced
1/2 red capsicum, sliced
3/4 - 1 cup grated cheese (lactose free if required)

Method
  • Place a baking tray or pizza stone in a cold oven. Preheat the oven to 220 degrees.
  • Bring the barbecue sauce ingredients to a boil in a saucepan to reduce to desired thickness. Mine took 2 minutes. Set aside to cool slightly.

  • Whisk the flour, baking powder and salt to combine.
  • Add 1/2 cup water, oil and stir to combine. Add remaining water gradually until the dough comes together in a ball and is not too dry.

  • Kneed the dough briefly, until smooth, 1 - 2 minutes.
  • Roll or pull the dough into desired shape of even thickness. I made a flat 35 cm circle.
  • Spread the sauce, sprinkle the toppings and cheese on top last.

  • Bake for 12 - 15 minutes or until the pizza crust has cooked and the cheese has melted.
  • Slice and serve.

  • Tips
  • The oven must start cold or the pizza stone will crack. Heating a baking tray first results in a nice cooked crust.
  • Use poached chicken (for a low fat option), roast or BBQ chicken.
