Polenta makes an excellent meat alternative, and is great choice for vegetarians to have at a barbecue Vegetarians can often feel left out at a barbecue full of meat eaters, but add polenta to the mix and you can enjoy the BBQ every bit as much as everyone else.

Makes: 7 servings
Ingredients
500g ready cooked polenta block
1 egg
1 tbsp coconut oil
Plain wholemeal flour for dusting
Method
Slice the polenta horizontally into fourteen slices.
Beat the egg with a fork, and then dip each slice in the egg.
Lightly dust each slice with flour.
Fry the polenta in coconut oil at a low/medium heat on both sides until lightly coloured.
If you are not having a barbecue, you can stop cooking here and serve. If you are having a BBQ, then place each slice on BBQ and grill on both sides, until partially blackened.
