Beacon Hill Cookies

Whether these chocolate meringue cookies were invented by someone living in Beacon Hill, I don't know. One thing I do know, however, is that they are intensely dark, and absolutely delicious. Based on the brands I used, each cookie is about 89 calories.

Preparation Time: 30 minutes
Cooking Time: 12 minutes
Makes: 15 servings

Ingredients
2 large eggs
50g Xylitol sweetener (or caster sugar if you prefer)
50g chopped hazelnuts
50g 70% dark drinking chocolate (or cocoa powder)
100g dark Belgian chocolate
1/2 tsp vanilla extract
1/2 tsp cream of tartar


Method
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.



  • Melt the chocolate over a pot of boiling water, and stir in the vanilla extract.



  • Mix together the hazelnuts, cream of tartar, and drinking chocolate, then stir it into the melted chocolate.



  • Separate the eggs and whisk the whites with sweetener/sugar until they from soft peaks.



  • Fold the egg whites into the chocolate mixture gradually, until it is all incorporated.



  • Pour fifteen dessert spoon-sized drops onto a baking tray and cook in the oven.
