Beautiful Banana Cake

Every cook needs one - a banana cake recipe that is simple and reliable and only requires pantry staples and ripened bananas. This is the recipe I have followed on countless occasions and it never seems to matter what size the bananas are - it always works!

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 10

125g butter
165g caster sugar
1 tsp vanilla essence
1 egg
2 ripened bananas
225g SR flour, sifted
1/4 tsp bicarbonate of soda
1/4 cup milk

11/2 cups icing sugar
lemon juice

Pre-heat the oven to 180 degrees (170 fan-forced).
Grease and line a loaf tin.
Cream the butter, sugar and vanilla essence until light and fluffy.

Beat in the egg thoroughly.
Mash the bananas and stir them through the mixture.

Fold the sifted flour through, gently.
Dissolve the bicarbonate of soda into the milk, then gently stir this through the mixture.

Spoon the mixture into the greased tin and bake for approximately 40mins or until a skewer, when placed into the centre of the cake, comes out dry.
When the cake has cooled it's time to ice it with lemon icing. Combine the icing sugar with enough lemon juice to make a spreadable mixture. Smooth this over the top of the cake.
Slice cake when icing has set.
