Bee Bread
After finding a recipe for a honey loaf a while back, I decided that I would change it to my own tastes. Instead of a white bloomer, I have made a wholemeal sourdough to give it deeper flavours. I also swapped almonds for pollen to celebrate every aspect of a bees working life - and of course, the eventual arrival of spring. It has finally come. Based on the brands I used, if you divide it into twenty portions, then each is about 106 calories.
Preparation Time: 7 hours
Cooking Time: 35 minutes
Makes: 1 loaf
Ingredients
450g wholemeal bread flour
300g
sourdough starter
60g clear honey
1/2 lemon
1/2 tsp salt
2 tsp bee pollen
Method
Mix the flour, starter, 50g honey, salt, and pollen together.
Gradually pour in the water to form a dough.
Knead the dough for ten minutes, then leave to prove for about six hours or until it has doubled in size.
Pre-heat your oven to 190 & #3872 ;C/ 170 & #3872 ;C fan/400 & #3872 ;F/6 Gas.
Score the top of the bread dough.
Squeeze the juice from your lemon into 10g honey and warm in the microwave for a few seconds.
Brush the mixture over the top of the bread.
Bake the bread in the oven.
