Beef Veggy Stir Fry
Healthy, hearty and full of veggies!

Cooking Time: 20 minutes
Makes: 2-3
Ingredients
400g sliced beef (stir fry beef is already sliced for you)
1 garlic clove, finely chopped
Dark soy sauce
440g egg noodles (packaging says this is 2 serves, but 440g is plenty for 3 people)
200g sliced button mushrooms
1 capsicum
3 spring onions
1 can baby corn spears
Bean sprouts
Method
Before you begin, put a kettle of water on to boil.
Chop all the vegetables ready for when you need them.
Cook the beef and fry until nicely browned.
Remove from the pan and set aside in a bowl or a plate.
Add all the vegetables except the bean sprouts to the pan and fry until they start to soften.
Prepare the noodles while the veg is cooking as per the packet; separate into a large heatproof bowl and soak in hot water.
Return the beef to the pan and heat back through.
Add the noodles,soy sauce and bean sprouts, stir and heat through.
Serve, eat, enjoy.
