Beef Veggy Stir Fry

Healthy, hearty and full of veggies!

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2-3

Ingredients
400g sliced beef (stir fry beef is already sliced for you)
1 garlic clove, finely chopped
Dark soy sauce
440g egg noodles (packaging says this is 2 serves, but 440g is plenty for 3 people)
200g sliced button mushrooms
1 capsicum
3 spring onions
1 can baby corn spears
Bean sprouts

Method
  • Before you begin, put a kettle of water on to boil.
  • Chop all the vegetables ready for when you need them.



  • Cook the beef and fry until nicely browned.
  • Remove from the pan and set aside in a bowl or a plate.
  • Add all the vegetables except the bean sprouts to the pan and fry until they start to soften.
  • Prepare the noodles while the veg is cooking as per the packet; separate into a large heatproof bowl and soak in hot water.
  • Return the beef to the pan and heat back through.
  • Add the noodles,soy sauce and bean sprouts, stir and heat through.
  • Serve, eat, enjoy.
