Quick, budget friendly and tasty. This great mid week meal is a hit with the family. I slice minute steaks and thinly cut the vegetables to make this easy dinner. Serve with jasmine rice or vermicelli noodles.

This quick beef and cashew stir fry is tasty

Serves 4
Ingredients
3/4 cup cashews
1 tbsp oil
2 garlic cloves, finely cut
4 minute steaks, sliced
1 red capsicum, sliced
1 carrot, finely sliced
1 zucchini, finely sliced
2 tbsp oyster sauce
1 tbsp fish sauce (optional)
1 tsp raw sugar (exclude if not adding fish sauce)
1 birdseye chilli, finely cut, to serve (optional)
Jasmine rice or vermicelli noodles, to serve
Method
Cook the rice as per the packet instructions, if desired.
Stir fry cashews in a frypan or wok for 1-2 minutes, until slightly brown. Set aside.
Add oil and stir fry 1/2 of the garlic on high heat for 1 minute.
Add beef and stir fry until the meat is just browned. Set aside.

Minute steaks cook quickly
Add the 1/2 of garlic and stir fry for 1 minute. Add the capsicum and stir fry for 1 minute.
Add the carrot and stir fry for 1 minute.

Red or yellow capsicum has a sweet flavour
Add the zucchini and stir fry for 1 minute.
Add the beef and sauce to the vegetables, stir fry for 1 minute until the beef is warmed through.

This quick stir fry is tasty
Add cashews, stir to combine and serve with cut chilli, jasmine rice or vermicelli noodles.
Tips
This Thai inspired stir fry uses fish sauce. Exclude the fish sauce and sugar if you do not like.
Add cut birdseye chilli with the garlic to make it spicy.
