Beef Sausage Rolls
Sausage rolls are the perfect little treat that you can have for lunch or dinner, or as an after school snack. I'm yet to find a child who doesn't love a sausage roll slathered in tomato sauce, and home made tastes so much better than the frozen supermarket varieties.

Serves: 4
Ingredients
300 g beef mince
1 small onion, chopped
1 carrot, peeled, grated
1 egg, lightly beaten
1 tbs parsley leaves, chopped
1/2 tsp mixed herbs
1/2 tsp ground black pepper
2 sheets frozen puff pastry, partially thawed
1 tbs milk
Method
Preheat oven to 220C and line a baking tray with baking paper.
In a large bowl, combine the mince, onion, carrot, egg, parsley, herbs and pepper. Mix well.
Cut pastry sheets in half
Using 1/4 of the mince mixture, shape it into a sausage and place it along 1 edge of the pastry. Roll up the pastry to enclose the mince.
Cut the roll into 4 pieces and place each piece seam side down on prepared tray.
Repeat with the remaining mince and pastry.
Brush the top of the sausage rolls with milk and bake for 20 -25 minutes until golden brown and puffed. Allow to cool on tray for 5 minutes. Serve hot.
