Beef with Oyster Sauce

A tasty and delicious stir-fried beef with oyster sauce that is simple and easy to cook and makes a perfect dish for the family.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Makes: 4 servings

300g rump steak
1 tsp sugar
1 tbsp dark soy sauce
2 tsp Shao Xing rice wine
2 tsp cornflour
4 dried Chinese mushrooms
4 slices ginger
1 spring onion, cut into short lengths
75g snowpeas, ends trimmed
1 carrot, thinly sliced
1/2 tsp salt
2 tbsp oyster sauce

Cut the beef across the grain into thin bite-size slices.
Combine with half the sugar, the soy sauce, rice wine, cornflour and 2 tbsp water.
Marinate in the fridge for 30 minutes.

Soak the dried mushrooms in boiling water for 30 mins, then drain and squeeze out any excess water.
Remove and discard the stems and cut the caps to quarters.
Pour 1/2 cup of oil into a wok. Heat the oil to 180C, or until a piece of bread fries golden brown in 15 seconds when dropped in the oil.
Cook the beef for 45-50 seconds, stirring to separate the pieces, and remove as soon as the colour changes.
Drain well in a colander.
Pour the oil from the wok, leaving 2 tbsp.

Reheat the reserved oil over high heat until very hot and stir-fry the ginger and spring onion for 1 min.

Add the snowpeas, mushrooms and carrot and stir-fry for 1 min, then add the salt and remaining sugar and stir-fry for 1 min.

Toss with the beef and the oyster sauce.

Serve with steamed jasmine rice.
