Beer Marinated Sweet Potato Fries
These baked sweet potato fries are crisp on the outside and fluffy on the inside with a lingering subtle beer flavor.
I added minced onion and garlic to these because I love the little flavoursome bites that get toasted in the oven. But feel free to keep it simple with just beer, salt, oil, and sweet or white potatoes.
Preparation Time: 40 minutes (including marinating)

Makes: 1 servings
Ingredients
1 sweet potato
1 garlic clove
1/4 brown onion
2 tbsp coconut oil
salt and pepper
Enough beer to cover the fries 1-2 bottles.
Method
Cut the sweet potato into thin fries leaving the skin on.
Toss the cut sweet potatoes, minced garlic, and minced onion into a wide bowl, baking dish or tupperware.
Pour enough beer over the sweet potatoes to cover them.
Let them marinate for 30 minutes, stirring a few times.
Preheat the oven to 180 degrees and line with baking sheets.
After 30 minutes drain out the beer, and lay the potatoes, garlic and onion on the baking sheet. Take the time to ensure the fries aren't overlapping or they wont crisp up! Drizzle with oil, just enough to lightly coat.
Bake for about 30-45 minutes, or until browned and crispy. Agitate and flip the fries every 15 minutes to toast all sides.
