Beetroot and carrot quinoa porridge

Quinoa is the only grain which contains all nine essential amino acids in proteins, making it an ideal grain for those interested in plant-based protein.



It's also incredibly versatile and the flakes in particular make a delicious porridge, and are easier to cook than standard quinoa grains.

Preparation Time: 2 minutes
Cooking Time: 3 minutes
Makes: 1 serving

Ingredients
100g quinoa flakes
50ml rice milk
1 grated carrot/carrot pulp
Half a grated baby beet/beetroot pulp
Tsp cinnamon powder
Tblsp peanut butter (optional)

Method
  • Add the vegetable pulp/grated beetroot and carrot to the dry quinoa.



  • Combine the wet and dry ingredients and add the milk.



  • Place in the microwave on high for 1 minute and 30 seconds. Add the cinnamon, stir and replace for another 1 minute and 30.

  • Remove from the microwave and tuck in! It's delicious with a dollop of salt-free peanut butter, and is naturally sugar-free.
