Beetroot and Strawberry Icrecream
If you think that beetroot is an odd icecream/smoothie ingredient, I promise you’ll change your mind after you try this beetroot and strawberry combo, and see the colour. The sweetness of the beetroot blends perfectly with the tartness of the strawberries and sweetness of the bananas.
Almost too pretty to eat...almost
This is a wonderful transition recipe for spring—it still features wintery produce with the beetroot but the tart strawberries are a prelude of May.

Makes: 1 servings
Ingredients
300 grams frozen bananas
10 strawberries - fresh or frozen
1/2 a beetroot
80 ml coconut water - more if needed
1 tsp cinnamon
Cinnamon, fresh strawberries and shredded coconut to serve.
Method
Peel the beetroot and place it in the blender with the hulled strawberries, cinnamon and coconut water. Blend.
Seriously, this colour
Add in the frozen banana chunks and blend until a thick icecream consistency forms. Add more coconut water if needed but be patient!
Scoop out of the blender into a bowl and top with coconut, cinnamon and fresh strawberries.
Enjoy immediately.
Additional toppings include nuts, seeds, banana coins, coconut sugar, or muesli!
