Beetroot Feta Balls with Sauteed Kale
Beetroot is a vegetarian's dream. Grated it becomes an exciting, not to mention a nutrient-dense and colourful dream. Add feta and beans to the mix and you'll win over meat eaters.

Makes: 2 servings
Ingredients
1 large beetroot bulb
400g soaked chickpeas
100g feta cheese
4 carrots
large handful curly kale
Sprig of rosemary
Sprig of fresh thyme
Half a lemon
10ml extra virgin olive oil
Method
Drizzle the squash in olive oil, add the garlic, pepper and thyme and place in the oven for 20 minutes at gas mark 180.
Drain the chickpeas, place in a bowl and mash.
Grate the whole beetroot into the bowl along with the cheese.
Combine using a fork.
Using your hands, roll a small amount of the mixture into balls. Repeat with all of the beet-ball mix until ready to fry.
Sautee the kale with the herbs and seasoning.
Shave the carrots into ribbons and repeat the above step.
Add the beetroot balls to a frying pan over a medium heat. Cook for 10 minutes, turning every two minutes.
Remove the squash from the oven.
Slice the squash roughly.
Serve the squash in a bowl.
Plate up the vegetables.
Transfer the beet balls to a plate and dig into this veggie feast.
