Belindas Meatloaf

I like to think this meatloaf is a healthier version of meatloaf because I've replaced some of the meat with lentils. Don't tell the family and they won't even notice they're there.

Preparation Time: 10 minutes
Cooking Time: 60 minutes
Serves: 4 - 6

Ingredients
400 g minced beef
1 x 400 g tin lentils, drained
1 onion, finely chopped
2 carrots, grated
1 tsp garlic powder
1 egg, whisked
1 1/2 cups fresh breadcrumbs
2 tsp worcestershire sauce
1/2 cup tomato sauce

Method
  • Preheat oven to 200C and grease and line a loaf pan.
  • Combine all ingredients in a bowl and mix well.

  • Spoon mixture into the loaf pan and level the top with a spoon.

  • Bake for 60 minutes or until browned and cooked through.
  • Drain the juices from the pan and set aside for 5 minutes before serving.
