Belinda's Shepherd's Pie

Shepherd's pie is a great healthy meal that is enjoyed by everyone in my family. We love the combination of mince, vegetables and mashed potatoes. This meal is great to freeze and have on standby and is a fantastic way to use up any vegetables.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serves: 4

175 g mince beef
500 g mixed vegetables, diced
100 g prepared lentils (approx 40 g dried lentils, soaked overnight)
1 onion, diced
500 g potatoes, peeled and chopped
1 tbs butter or margarine
2 - tbs milk
2 3 tbs tomato sauce
2 3 tbs BBQ sauce
1 tbs Worcestershire sauce
1 tsp oil
salt and pepper, to taste

Add potatoes to a large saucepan and cover with water. Boil potatoes until soft.
Drain the potatoes and return them to the saucepan, mash the potatoes with the butter and milk. Season to taste. Set the potatoes aside while you prepare the rest of your dish.

Preheat oven to 180 C and grease a baking dish.
Heat the oil to a medium heat in a large fry pan, add the onions and mince and cook until the onions have softened and the mince has browned.
Add the mixed vegetables to the pan and cook until the vegetables are just cooked.

Add the lentils, tomato sauce, BBQ sauce and Worcestershire sauce and cook for a minute until the lentils and sauces are heated. Season to taste.
Place the mince mixture into the bottom of your baking dish.
Evenly distribute the mashed potatoes over the top of your mince mixture.
Place pie in the oven and bake for 20 minutes or until the potatoes are golden brown.

Note: You could easily make this dish vegetarian by swapping the mince beef for lentils.
