Berry Jelly Mousse

Light, refreshing, and super easy to make, this is a low calorie alternative to trifles and traditional mousses. A great dessert for a summer barbecue. You can use whichever flavour jelly and berries you like. I have combined strawberry and blackberry.

Preparation Time: 15 minutes plus setting time.

Makes: 8 servings

Ingredients
135g strawberry jelly cubes
200g blackberries
340ml evaporated milk
285ml boiling water
285mk cold water

Method



  • Dissolve the jelly cubes by storing in boiling water, then stir in the cold water and allow to cool.



  • Whisk the evaporated milk until thick and bubbly.



  • Puree the blackberries.



  • Fold in the liquid jelly and fruit purée into the evaporated milk.



  • Pour into a mould and allow to set in the fridge for two hours.
