Berry Mess

This simple eton mess style dessert is sweet, delicious and sure to impress. If berries are not in season, any fruit topping will be great.

Preparation Time: 30 minutes
Cooking Time: 60 minutes
Makes: 8-10 servings

Finished product

6 egg whites
300 grams caster sugar
500 grams strawberries
1 punet blueberries
400 mls whipping cream
1 vanilla pod split and seeds removed
2 tablespoons icing sugar
Pinch of salt

Pre-heat the oven to 150 degrees celsius, and line a baking tray with baking paper.

Put your egg whites in a clean bowl and beat with an electric beater until firm peaks appear, with beaters still running, gradually add caster sugar and a pinch of salt.

Put the beater on high and beat until glossy and smooth, approx 6 minutes.

Dot the corners of the baking paper with meringue and use to stick to the tray.

Spoon the rest on to the tray and smooth it out evenly over the baking paper.

Bake for 1 hour until crunchy on the outside and sticky in the middle.

Let cool completely then transfer to a nice platter.

While cooking place the chopped strawberries and blueberries into a bowl and add a little caster sugar, allow to sit to sweeten.

Whip the cream, vanilla seeds, and icing sugar till soft peaks form.

Scrunch some of the berries to release the juices.

Drop the meringue onto the plater so it shatters into pieces, top with cream and berries and serve with a cheeky Rose.
