Best Banoffee Pie
Banana toffee = banoffee! Classic dessert for kids and adults alike.
Preparation Time: 4hrs
Makes: 8 servings
Ingredients
1 x can condensed milk
2 x large bananas
500ml whipping or double cream
1 x packet Ginger Nut biscuits
2 x tbsps butter
Cadburys Flake or grated chocolate, to serve
Method
Place the tin of condensed milk, unopened, in a saucepan, cover in water and bring to the boil
Boil the can in the water for 3hrs, checking on it to turn the tin and ensuring that the water does not boil down as the tin must remain covered by water throughout
Once the 3hrs are up, remove the tin from the saucepan, being careful not to burn yourself and set aside to cool
Take the packet of ginger nut biscuits and place them in a clean plastic bag. Take a rolling pin or pestle and bash the bag until the biscuits are fine crumbs
Melt the butter in a saucepan then add the biscuits and stir until all of the biscuits are coated and the mix becomes a little darker
Take the pan off the heat and transfer the biscuit content to a greased, spring form cake tin
Spread the biscuit mix evenly and press down with a spoon to create a tightly compacted biscuit base
Refrigerate for 30 minutes, meanwhile whip the cream into thick peaks
Open the tin of condensed milk. It will now be transformed into a caramel toffee consistency
Spoon the toffee out onto the biscuit base and spread evenly with a fork
Chop the banana into pennies and spread evenly on top of the caramel
Cover with whipped cream
Push the bottom of the spring form cake tin and remove outer layer
Crumble a Cadbury's Flake or grate chocolate on top to serve
