Chocolate mousse......
There are chocolate mousses and there is THIS chocolate mousse, which is rich, with a hint of orange flavour and with no added sugar.
I only make this on special occasions which I had on New Years Day.
I use Lindt 70% chocolate however cooking chocolate works fine but would then need a bit of added sugar.
This is quite a simple, quick recipe but the results are superb.
Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 6 servings
Ingredients
6 eggs
275 g
chocolate
100 g
orange intense chocolate
1 packet
sponge fingers
Bit of milk
Orange zest
Method
Put some milk in a flat bowl and dip the sponge fingers into this. Do not let them get too soggy -just dip in and out on both sides.
In a bowl put these sponge fingers along the base and standing up along the sides. I thought I had a whole packet but I had used half of them, hence the outside of this mousse is not encased in sponge finger.
Separate the eggs and beat the egg whites in a bowl -I used my electric mixer for this.
Melt the chocolate - I always do this in the microwave for about 4 minutes, stopping after each minute to ensure you do not burn it.
Stir the chocolate to make sure it is all melted, and add the orange zest.
Add the egg yolks and mix.

Gently fold in the egg whites ensuring that you mix the chocolate at the very bottom of the dish.

Mousse will be thick and look like this now
Spoon into the dish with the sponge fingers, cover, and put in the fridge.
Can be made the day before.
Serve with cream if desired.
