Bison Buffalo Roast

[Image1] Bison makes a wonderful roast. It is also lower in fat than beef or pork roasts. Buffalo is grass fed which gives it a great flavor. You can easily add potatoes, onions, carrots, and parsnips if you would like around the edges when you cook to make this a meal in one pan.

Preparation Time: 3 minutes
Cooking Time: 6 hours
Serves: 4

Ingredients
680 g bison roast
1 tsp "Better Than Bouillon Roasted Beef Rub" or a little regular beef bouillon mixed with water for a paste.
2 strips of thick bacon cut in half
2 tbsp water
Sprig of parsley for garnish

Method
  • Place bison roast in glass oven pan.
  • Smear a little beef rub on top of roast.
  • Place bacon on roast.
  • Add water to bottom.
  • Cover and bake for six hours at 325 degrees.
  • Pour drippings over meat and add parsley for garnish.
