Black Bean Pork with Bok Choy

A delicious, fragrant stir-fry pork dish with vegetables and black bean sauce. Perfect dish to be served with steamed rice.



Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
400g lean pork leg steak
1 tbsp garlic black beans sauce
1 bunch bok choy, chopped
2 tbsp sesame oil
2 onions, thinly sliced
2 garlic cloves, thinly chopped
2-3 tsp chopped fresh ginger
1 red capsicum, thinly sliced
90g water chestnuts, thinly sliced
2 tbsp oyster sauce
1 tbsp soy sauce
2 tsp fish sauce
steamed rice, to serve

Method
  • Slice the pork steak into strips, cutting across the grain. Heat half the sesame oil in a large pan. Cook the onion, garlic and ginger over high heat for 3-4 minutes.



  • Add the capsicum and cook for 2-3 minutes. Remove from the pan.



  • Heat the remaining sesame oil and stir-fry the pork over high heat.



  • Return the onion mixture with black beans, oyster, soy and fish sauces. Toss to mix.



  • Add the bok choy and water chesnuts. Toss quickly to combine the ingredients, lower the heat, cover and steam for 3-4 minutes, or until the bok choy has just wilted.



  • Serve immediately with steamed rice.
