Blackberry Torte
What with my grandpa's blackberry bushes, and my dad picking wild blackberries, our house has become overrun by this delicious fruit. So far we have eaten them fresh, eaten them stewed, and the other day I decided to make a blackberry torte. A torte is a rich, layered cake filled with cream, mousse, or fruit, and usually made with ground almonds to give it a nutty flavour and denser texture. Based on the brands I used, each slice is about 277 calories.

Makes: 8 servings
Ingredients
150g self raising wholemeal flour
150g ground almonds
75g margarine
20g Truvia sweetener (or 75g caster sugar if you prefer)
300g blackberries
2 tbsp half fat creme fraiche
1 tbsp flaked almonds
1 tsp almond extract
1 tsp cinnamon
2 eggs
Method
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.
Mix the flour, ground almonds, and cinnamon together.
Cream the margarine with the sweetener/sugar.
Beat in the eggs and almond essence.
Beat the mixture into the flour.
Divide the mixture equally into two bowls and beat the creme fraiche into one of them.
Spoon the creme fraiche cake mixture into a cake tin.
Layer the blackberries on top.
Spread the rest of the mixture over the blackberries.
Sprinkle the flaked almonds on top, then bake in the oven.
