Blackcurrant Sorbet

Sorbet was first believed to be introduced to Europe in the thirteenth century by Marco Polo, who brought it back to Italy from China. It reached France in the sixteenth century when Catherine de' Medici moved there to marry the Duke of Orleans, and eventually reached England by the end of the seventeenth century.



Made with four simple ingredients, this blackcurrant sorbet is a fruity delight, and the perfect healthy alternative to ice cream. Based on the brands I used, it is only 35 calories per serving.

Preparation Time: 4 hours
Cooking Time: 2 minutes
Makes: 9 servings

Ingredients
500g blackcurrants
70g Truvia sweetener (or granulated sugar if you prefer)
240ml water
1 tbsp lemon juice

Method



  • Stir the sweetener/sugar into a saucepan of boiling water until it dissolves to form a syrup.



  • Pour the syrup into a freezable container, then put in the fridge to chill.



  • Puree the blackcurrants in a blender with the lemon juice.



  • Pour the puree into the cooled syrup. and stir until fully integrated.
  • Put the sorbet into the freezer.



  • Give it a stir every half an hour until set to prevent ice crystals forming.
