Blood Orange Rhubarb Pudding
I love the flavour and colour of blood oranges, but you can also use normal oranges for this recipe if your prefer.

Ingredients
60ml coconut oil
400g rhubarb
6 tbsp agave nectar
2 ½ tbsp Truvia sweetener (or 125g caster sugar)
3 blood oranges
175g plain flour
1 ½ tbsp baking powder
3 eggs
Method
Beat eggs with sweetener/sugar.
Juice and zest oranges.
Beat in zest and coconut oil.
Fold in flour and baking powder.
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/ 375 & #3872 ;F/ 5 Gas.
Chop rhubarb and divide 200g between five ramekins.
Drizzle two tablespoons agave nectar equally between them.
Pour the sponge mixture over the top.
Place the ramekins in a baking dish and fill it ¾ full with water.
Bake in the oven for 20 minutes.
Stew rhubarb in orange juice and four tablespoons agave nectar, stirring every now and then, for about fifteen minutes or until the rhubarb has broken down into a thick chunky sauce.
Turn the puddings out of the ramekins and pour the sauce on top.
