Blue Cheese Chicken with Apple Chutney Sauce

Although this looks complicated, it is a surprisingly easy meal to make.

The mixture of the sharp blue cheese, with the apple and chutney sauce, is a great combination to put inside the chicken, as the tastes are so varied.

Serve it with mashed potatoes, and any other vegetable, to make it a complete meal.

Preparation Time: 20 minutes
Cooking Time: 35 minutes
Makes: 2 servings

1 large chicken breast (about 300 g)
35 g blue cheese
40 g ricotta cheese
1¼ tsp French mustard
¼ cup walnuts
25 g Butter, melted

For the Apple Chutney Sauce
¾ leek, white part only
1 clove garlic, crushed
1 large red apple, peeled,cored, sliced
¼ cup fruit chutney
2 tbsp chopped fresh chives
1 large red apple, peeled,cored, sliced

These apple corers are perfect for this job

Preheat oven to moderate -about 170° fan forced, or 190° normal oven.

Cut a deep pocket in the chicken breast, going as close to the edge as possible, and being careful not to cut the edge.


Combine the blue cheese and ricotta with the mustard and walnuts, and mix well.


Spoon this mixture into the chicken pockets.


Close the openings with toothpicks, to prevent the filling oozing out while cooking.


Put the chicken in a shallow baking dish and brush with the melted butter. Bake for about 25 minutes, or until it is cooked through, turning occasionally.

For the Apple Chutney Sauce
Meanwhile, heat a bit of oil and add the leek and garlic. Cook for about 2 minutes or until the leek is getting soft.

Add the chopped apple and cook about 3 minutes or until the apple is tender.

Stir in the chutney and chives, season to taste if required, and stir till it is heated through.


Take the toothpicks out of the chicken, and slice.

Pour the apple chutney sauce around the chicken.


Add vegetables or salad, and serve.
