Blue Cheese Souffle on a Polenta Base

This souffle literally "melted in my mouth".

Although it has blue cheese in it, the taste is very subtle, and the polenta put on the bottom of the dishes, forms a lovely crust in contrast to the light, fluffy taste of the souffle.

Quite easy to make, this could be served with a salad however I made some cucumber rolls to eat with it.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 2 servings

1/8 cup polenta
15 g butter
1/8 cup plain flour
1/2 cup milk
2 eggs, separated
65 g cream cheese
50 g blue cheese

Preheat the oven to 195 fan forced.

Spray 2 one cup capacity ramekins with oil, and sprinkle with the polenta.


Melt the butter in a pan, add the flour and cook for about one minute, stirring continuously.

Slowly add the milk, stirring once again, until it boils and thickens.


Turn off the heat, and add the cream cheese, crumbled blue cheese, and then the egg yolks.


Stir until it is quite smooth (doesn't matter if there are a few small lumps left) and let this mixture cool slightly.

Beat the eggs whites till they are stiff and then gently fold them into this mixture.


Pour half the mixture into each ramekin.


Bake on a tray lined with baking paper (in case it spills over the dishes), for about 15 minutes or until the souffle has risen and is lightly brown.


Serve - I served with my cucumber rolls.
