Blue Cheese Souffle with Cream Cheese and Polenta Base

I cannot claim this to be a healthy recipe!

I CAN claim it to be a delightful tasting recipe, and one that melts in your mouth and oozes the delectable flavours of blue cheese, cream cheese and white sauce.

It is easy to make, and can be served as a main with salad, or if you use smaller dishes, could be used as an entre.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 3 - 4 servings

Ingredients
¼ cup [link http://reviewclue.com.au/macro-australian-polenta/ polenta]
30 g butter
¼ cup flour
1 cup milk
125 g [link http://reviewclue.com.au/philadelphia-original-spreadable-cream-cheese/ Spreadable Cream Cheese]
4 eggs, separated
100 g blue cheese, crumbled

Method
  • Preheat oven to 185° for fan forced.

  • Melt the butter, add the flour and cook, stirring for a minute. Take off heat and add a bit of milk and bring back to the boil and gradually add the balance of the milk, stirring continuously till it thickens.


  • Stir in the egg yolks, cream cheese and blue cheese and allow to cool.


  • Meanwhile, spray some 1 cup capacity souffle dishes with oil, and put the [link http://reviewclue.com.au/macro-australian-polenta/ polenta] on the base.
  • my dishes are larger than one cup


  • Beat the egg whites till stiff and gently add to the cheese mixture.


  • Divide between the 3 or 4 dishes you are using.


  • Bake in a hot oven for 15 minutes or until risen and lightly browned.


  • Garnish with parsley and have with a salad or even steamed vegetables.
