Blueberry and Bourbon Jam

There's nothing better than beautiful jam on crispy crumpets for breakfast. Or a late night snack. This jam is super easy and has an amazing flavour.

Preparation Time: 5 minutes
Cooking Time: 60 minutes
Makes: 3 x 200g jars

Ingredients
500g fresh or frozen blueberries
500g fine white sugar
1/2 cup good quality Bourbon

Method
  • Place the blueberries and sugar in a heavy based saucepan and gently heat until just simmering.
  • Stir regularly for 50 minutes to make sure all sugar is dissolved and even
  • throughout the jam. Add the Bourbon after 30 minutes of cooking.
  • To test whether it will set, take a half teaspoon of mixture and put on a cold plate. It should set in about 2 minutes. *Keep simmering for another 10 minutes if it isn't quite ready. Please note that the boiling time will vary depending on the water content of your fruit.
  • Allow to cool and then ladle into sterilised jars and seal tightly. Store in the pantry, not the fridge.
