Blueberry and Cottage Cheese on Homemade Raisin Toast
This is great for either breakfast or lunch. I used it with homemade sultana bread, which made it even nicer.
Preparation Time: 5 minutes
Cooking Time: About 1½ hours for bread and 5 minutes for a sandwich maker
Serves: 1 - 2
Ingredients
For the filling
About 12 -14 fresh blueberries
2 tbsp cottage cheese
1 tbsp cream cheese or ricotta
Dash of nutmeg
¼ tsp honey
2 slices bread
For the Raisin Bread
1 cup water
2 tbsp butter
3 cups plain flour
2 tbsp sugar
1 tsp salt
1 tsp cinnamon
2½ tsp yeast
1 cup raisins
A few almonds - optional
Method
For the raisin bread
I made this in my bread machine and it is easy and so much nicer than the bought one with preservatives in it. I sliced it and froze the leftovers.
Put all the ingredients in the bread maker apart from the raisins.
Add the raisins in on the "add in" cycle.
Bake this on a "sweet bread" setting, and when cool, slice thickly, toast and butter.
For the filling
Heat a sandwich press.
Meanwhile if the blueberries are large, cut them in half.
Mix the two kinds of cheese together and add the nutmeg and honey.
Spread on one side of the toast and top with the blueberries.
Put the other slice of bread on top, and put in the sandwich maker until it is golden.
This was really too much for one person as the raisin bread was cut thick!
