Blueberry and Cottage Cheese on Homemade Raisin Toast

This is great for either breakfast or lunch. I used it with homemade sultana bread, which made it even nicer.

Preparation Time: 5 minutes
Cooking Time: About 1½ hours for bread and 5 minutes for a sandwich maker
Serves: 1 - 2

Ingredients
For the filling
About 12 -14 fresh blueberries
2 tbsp cottage cheese
1 tbsp cream cheese or ricotta
Dash of nutmeg
¼ tsp honey
2 slices bread

For the Raisin Bread
1 cup water
2 tbsp butter
3 cups plain flour
2 tbsp sugar
1 tsp salt
1 tsp cinnamon
2½ tsp yeast
1 cup raisins
A few almonds - optional

Method
For the raisin bread
  • I made this in my bread machine and it is easy and so much nicer than the bought one with preservatives in it. I sliced it and froze the leftovers.

  • Put all the ingredients in the bread maker apart from the raisins.

  • Add the raisins in on the "add in" cycle.


  • Bake this on a "sweet bread" setting, and when cool, slice thickly, toast and butter.


  • For the filling
  • Heat a sandwich press.

  • Meanwhile if the blueberries are large, cut them in half.

  • Mix the two kinds of cheese together and add the nutmeg and honey.


  • Spread on one side of the toast and top with the blueberries.


  • Put the other slice of bread on top, and put in the sandwich maker until it is golden.

  • This was really too much for one person as the raisin bread was cut thick!
