Blueberry and Nutmeg Cake

Visually impressive, and tastes like heaven, this cake is a winner. It's ideal for birthday parties and events.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 8 servings

100g blueberries
100g Greek yogurt
6 eggs
50g cream
1 tblsp nutmeg
Pinch of Salt
400g butter
400g plain flour
400g caster sugar
50g icing sugar

Required ingredients

Grease a sandwich/cake tin with butter and set aside.
Cream together 200g of the butter and 200g of sugar in a large bowl.
Sift together half the flour, nutmeg and salt.

Crack three of the eggs one by one, stirring after each, into the bowl.

Combine the flour and egg mixture to form the cake batter.

Pour into the greased cake tin and place in the oven for 40 minutes 170 degrees/gas mark 3.
Once baked, remove from the oven and leave to cool.

Repeat process with the other half of the cake ingredients.

Pour the double cream into a bowl.

Add the icing sugar, and Greek yogurt and whisk together until a thick cream forms, and 'sticks' to the whisk.

Using a knife begin to spread the cream frosting on the bottom layer of the cake.

Cover the entire bottom layer with the cream frosting.

Gently place the second cake on top of the cream frosting and spread a fine amount of some of the remaining frosting. This will help the blueberries 'stick'.

Dust around the edge of the cake with icing, through a sieve for a professional finish.

Cake, icing sugar, blueberries,

Serve immediately.
