Ingredients Crumble Topping
1 cup of sugar,
2/3 cup of plain flour,
3 teaspoons of cinnamon,
1/2 cup of butter, softened to room temperature.
3 cups of plain flour,
4 teaspoons of baking powder,
2 large eggs,
2/3 cup of oil,
2/3 cup of milk (approximate amount),
2 cups of frozen blueberries
1/3 cup white chocolate chips,
3 teaspoons of vanilla extract.
Preheat a conventional oven to 190 degrees celsius and place the rack in the centre of the oven. Line a baking tray with muffin cases.
In a medium sized bowl, add all of the topping ingredients and mix with a fork until a rough crumble forms.
Toss the plain flour and baking powder together in a large bowl.
Pour 1/3 cup of oil into a 1 cup measuring cup.
Add one egg to the measuring cup and top up with milk until full and pour over the flour.
Repeat the process of the oil, egg and milk one more time.
Add the vanilla extract and beat on low until just combined.
Mix the blueberries and white chocolate in with a spatula until combined.
Spoon the batter into the cases until they are two-thirds full.
Sprinkle the crumble mixture over the batter until the muffins are completely covered and the crumble mixture has been completely used.
Place the baking tray in the centre of the oven and cook for 25-30 minutes or until an inserted skewer comes out clean. Cook for another 5 minutes if necessary.
Remove from the oven when cooked and let the muffins cool... or enjoy hot!
