Blueberry Buttermilk Cookies with Lemon Glaze

This is a tasty recipe for some blueberry buttermilk cookies. The lemon glaze adds an extra sweet tang to the biscuits. Perfect recipe for some quick cookies, to use up extra buttermilk or as a snack.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 25 servings

Zest of 2 lemon
1 1/2 cup flour
1/4 tsp baking soda
1/4 tsp salt
100g unsalted butter
3/4 cup sugar
1 egg
1/2 tsp vanilla essence
1/3 cup buttermilk
1/2 cup fresh or frozen blueberries

Lemon Glaze
1/4 cup icing sugar
Juice of 1 Lemon
Lemon zest

Preheat the oven to 180°C and line a baking tray.
Sift the flour, baking soda and salt in a large bowl and combine together.

In a small bowl combine the sugar and lemon zest.

Using your finger tips, rub the lemon zest together with the sugar (This brings out the flavour).

Beat the butter until it is smooth and creamy.

Add in the lemon sugar and continue beating until pale. Add the egg and vanilla essence and beat well.

Mix in the flour mixture and buttermilk alternatively, half portions at a time until both ingredients are used up.

Use a spatula to fold the ingredients together.

Roll spoonfuls of the mixture into small balls and place on tray.

Slightly flatten the small balls and tuck about 3 to 4 blueberries into each.
Bake for 12-15 minutes or until light golden.

For the lemon glaze, beat together the icing sugar, lemon juice and zest for 3-4 minutes or until smooth.

Allow the cookies to rest until cool and spoon the lemon glaze over. Rest for 4-5 minutes for the glaze to set.
