Bocconcini and Tomato Salad with Leftovers

Have you ever had several leftovers, but it was not a balanced meal?

This happened to me a few nights ago, so I decided to make a salad to go with the falafel, and hash browns that I had left over. I also had some wonton parcels which I had frozen.

I have mizuna (a type of lettuce which grows like a weed!) growing profusely in my garden so I added a handful of this also to the salad.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

For the salad
75 g baby bocconcini
1 tomato, chopped
Handful mizuna
Falafel (optional)

For the dressing
Olive oil
1 tsp mustard
Bit of balsamic vinegar
1 tsp honey
Balance of meal
Any leftovers

For the salad
Heat the falafel for a minute or two in the microwave. Leave while you make the salad.

Mix the chopped tomatoes and bocconcini.


Chop the mizuna and add.


Mix all the salad dressing ingredients and put in a screw top jar, and shake.

Add the falafel (I chopped them in half), salad dressing, salt and pepper and mix till it is all coated.

Heat the leftovers as required.


Serve with the salad.
