Boiled Fruit Cake

What is so great about a boiled fruit cake is that it requires no eggs. That means that if you use soya butter or a vegetarian friendly margarine, then it is suitable for vegans. unlike a traditional fruit cake which can be quite heavy, this boiled fruit cake is light, moist, and uses less fat. Based on the brands I used, each slice is about 253 calories.

Preparation Time: 20 minutes
Cooking Time: 45 minutes
Makes: 8 servings

Ingredients
300g plain wholemeal flour
75g soya butter (or vegetarian friendly margarine)
75g seedless raisins
50g glace cherries
40g dark brown soft sugar
25g sultanas
25g mixed peel
300ml water
1tsp mixed spice
1tsp bicarbonate of soda

Method
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.



  • Mix all the fruit together and bring to the boil a saucepan of water.



  • Stir in the sugar and soya butter, and leave to simmer for five minutes.



  • Mix together the flour, bicarbonate of soda, and mixed spice.



  • Once the fruit mixture has cooled down, stir it into the flour until fully incorporated.



  • Spoon the mixture into a cake tin and bake in the oven.
