Boiled Tapioca Root Drums with Yogurt Dip

Boiled tapioca roots served with yogurt or chilli dip and black coffee is an outstanding combination.

In my house, the spicy hot chilli dip made with coconut oil is served with the boiled roots. In my husband's house, the yogurt dip is served with it. I like both the dips.

This is a mouth-watering energy food in Kerala cuisine with less work.

Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Makes: 2-3 servings

Ingredients
For tapioca drums
3-4 fresh tapioca roots
Water as needed
Salt to taste

For yogurt dip
3 tbsp greek yogurt
1-2 green chilli, chopped
2 pearl onion, peeled and chopped
Salt to taste

Method
  • Peel and wash the tapioca root. Cut them into 2-cm pieces.

  • Put it in a large vessel. Add water just to cover the pieces. Add salt to taste. Mix well and bring the water to a boil. Cover and let it cook on medium heat until the roots are soft and tender.

  • Remove from heat. Drain the water and let the root drums to cool a little.

  • Then mix yogurt with chopped green chilli, pearl onion and salt. The easy yogurt dip is ready.

  • Serve the root drums with the yogurt dip.
