Boozy Ginger Cream Pudding

The best thing about this decadent pudding is just how easy it is...Wow your guests with minimal time and effort.



Preparation Time: 15 minutes
Makes: 6 servings

Ingredients
2 x packets Ginger Nut Biscuits
Approx 300ml sweet sherry (such as Harveys Bristol Cream), brandy or whiskey
500ml double or whipping cream

Method
  • Whip the cream until it forms stiff peaks
  • Place the sherry in a bowl and prepare a large plate (a long, or rectangular plate is preferable)
  • Take one ginger nut biscuit and dip it into the bowl, first one side, then the next and ensure that both sides have soaked up the sherry (note - don't hold the biscuit in the sherry any longer than a quick dip, otherwise it will disintegrate)
  • Take one teaspoon of the cream and spread onto the sherry soaked biscuit. Place it on the plate, edge down
  • Repeat with another biscuit and sandwich against the existing biscuit with the cream
  • Repeat this process - sandwhiching the biscuits together with cream and laying upon their side until you have used all of the biscuits and the cream
  • If you have any cream left you may spread it over the finished pudding

  • To serve (optional)
  • Grate some dark chocolate or crumble a Cadbury's Flake on top

  • Note - for a non alcoholic version or for children you can replace the booze with fresh orange
