Braised Chicken with Baby Spinach

This recipe makes a simple braised chicken stew with baby spinach leaves that is perfect for the family.



Preparation Time: 5 minutes
Cooking Time: 60 minutes
Makes: 4 servings

Ingredients
1.5 kg chicken drumsticks
2 onions, halved, thinly sliced
3 garlic cloves, thinly sliced
3 ripe tomatoes, roughly chopped
1 cup chicken stock
Pinch saffron threads
1 cinnamon stick
100g baby spinach leaves
2 red chillies, chopped

Method
  • Season the chicken with salt and black pepper.
  • Heat oil over medium heat and cook the chicken, turning occasionally, until browned.
  • Transfer to a plate.



  • Add the onion to the pan and saute for 5 mins until soft.



  • Add the garlic and chilli and saute for 30 secs.



  • Add the chopped tomatoes and cook for 3 mins until soft and pulpy.



  • Pour in the stock.
  • Add in the saffron and cinnamon stick.



  • Return the chicken to the pan. Cover and simmer, turning once, for 45 mins or until chicken is tender and cooked through.



  • Add in spinach leaves and gently stir until just wilted.



  • Season with salt & black pepper. Serve warm.
