Braised Drumstick
Braising is a very simple cooking technique which only needs you to spend minimum time in the kitchen. so, if you're a busy man or woman, and always on the go, try this recipe! the chicken will cook itself while you are doing something else.
Preparation Time: 10 minutes
Cooking Time: 75 minutes
Makes: 6 servings
Ingredients
6 chicken drumsticks
4 cups chicken stock
3 cloves garlic, crushed and sliced
2 tablespoon olive oil
2 tablespoon vinegar
1 cup flat bean, chopped
1 cup mushrooms, sliced
1 carrot
1 tablespoon thyme leaves
1 tablespoon rosemary leaves
1 tablespoon oregano
1 tablespoon parsley
1/2 cup thick cream
Some broccoli and cauliflower
Salt and pepper for seasoning
Method
Cut carrot into small quarters, about the same size as other vegetables.
Season the chicken drums on one side.
Into a hot deep pan, add olive oil.
Turn heat to medium high, then put in the drums, seasoned side down for about 5 minutes, until golden.
Flip the chicken and fry for another 5 minutes.
Remove the chickens from the pan.
There should be some oil left in the pan by now, if not you can add some butter. Add in garlic and mushrooms, and stir fry until mushrooms become soft.
Add vinegar and scrape excess chicken meat sticking on base of pan.
Continue stirring until vinegar evaporates.
Add in carrots and beans, together with thyme, rosemary, oregano and parsley, and continue stirring for 2 minutes.
Put the drums on top of the vegetables, seasoned side up.
Pour chicken stock in, put lid on the pan.
Bring to boil on medium high heat. Once boiled, reduce heat to low, and simmer for 45 minutes, occasionally opening the lid and shaking the pan around a little, so that spices in broth mix around. You don't have to stir the content anymore at this stage. The chicken will still cook even it is left untouched.
Add in cream, cauliflower and broccoli and simmer for another 15 minutes.
Serve with rice, or bread.
