Braised Pea and Ham

Are you looking for a quick, delicious and healthy light meal or a side dish that stands out from the ordinary? Then this recipe made from frozen peas and sliced ham is for you.



For some time I have always kept frozen peas in my freezer. While I prefer fresh vegetables in most circumstances there is a big advantage of frozen of fresh peas. You see once a pea has been picked it starts to change within a day or so, becoming more starchy. Unless your peas are fresh from the garden, frozen peas are actually better than fresh ones. Let's not forget that not every meal can be a feast and sometimes it is good to go for convenience over freshness.

Preparation Time: 1 minute
Cooking Time: 10 minutes
Serves: 1 as a light meal or 2 as a side dish

Ingredients
1 cup of peas, frozen is okay
2 slices of ham, thinly sliced ham
A splash of lemon juice
Freshly ground black pepper

Method
  • Add a little oil to a pan on medium heat.
  • Add the thinly sliced ham to the pan and lightly fry.

  • Add in the frozen peas. There is no need to defrost them and no need to add water as the peas themselves will have enough water to cook themselves.

  • Fry the peas and ham until the peas are defrosted. My preference is to keep frying the peas until they are just beginning to brown.

  • Add a splash of lemon juice and ground black pepper, then cover and continue to cook for about 10 minutes on low heat until the peas are lovely and plump.
  • Serve as a side dish with lamb or steak or eat as a snack with rice or couscous.
