Brazilian Aubergine Soup

This beautifully coloured and tasty soup will spirit you away to Salvador de Bahia! You only have to listen to hear samba music...



Preparation Time: 20 minutes
Cooking Time: 35 minutes
Makes: 4 servings

Ingredients
2 large aubergine
2 large cloves of garlic
3 spring onions
1 green chilli
1L vegetable stock
250g fresh tomatoes
1/2 bunch coriander

Method
  • Cut the aubergine in half and then cut it into small cubes. Salt the flesh and allow to degorge for about 10 minutes. It is important to degorge the aubergine.



  • Peel and chop the cloves of garlic. Finely chop the spring onions. Roughly chop the tomatoes.

  • Place the aubergine, spring onions, garlic, tomatoes and stock in a stockpot. Add a little salt. Cover and bring to the boil and cook for 35 minutes.

  • Puree the soup with handheld stick blender.

  • Remove the leaves from the coriander and sprinkle them over the bowls to serve.
